SALADS

Ramen Oriental Cabbage Salad

1 large head of nappa cabbage (or bag of coleslaw)
2 pkgs of chicken flavored ramen noodle soup (broken up, seasoning reserved for dressing)
1 handful of chopped green onions
8-12 oz. toasted, slivered almonds (toast in a dry frying pan until darkened)
2 cups cooked and cubed chicken (optional)

Mix together in a large bowl.

Dressing:
Seasoning pkts out of the ramen soup
½ cup oil
2 Tbsp. red wine vinegar
½ tsp salt
½ tsp. pepper
2 Tbsp. sugar

Shake dressing well, then mix with salad

 

 

Ramen Oriental Salad (w/Craisins)

SALAD:

1 head Romaine lettuce
6-10 oz bag of fresh spinach
1 cup shredded mozzarella cheese
Craisins
Thinly sliced red onion
Jicama cut into small pieces

DRESSING (mix in blender or shake well):

1 c. oil
¾ c. sugar
½ c. red wine vinegar
½ tsp. garlic powder
¼ tsp. pepper
½ tsp. paprika
½ tsp. salt

I usually toss the dressing in with the salad right before it is served and I don’t use all of the dressing.

CRUNCHY TOPPING (the best part!):

1 cube butter
4 Tbsp. sugar
¼ c. sesame seeds
2 packages of ramen noodles (broken and un-cooked)
3-4 oz. sliced almonds

Melt butter in skillet, add sugar, sesame seeds, noodles and almonds.  Cook and stir until medium-browned.  Allow to cool completely prior to serving over salad.

 

 

Mandy's Cream Cheese Raspberry Salad

½ of a big carton vanilla yogurt (or two small)
8 oz. cream cheese (softened)
1 small box instant pudding – vanilla or cheesecake flavor
1 large tub of Cool Whip
1 pkg frozen raspberries

Beat first three ingredients with a mixer, on high, until they are smooth.  Fold in cool whip and raspberries. Some times I add in chocolate covered graham cracker pieces to make it extra yummy. SOOO GOOD either way!

 

 

Macaroni Salad

3-4 cups uncooked macaroni
1 cup mayonnaise (sometimes I use half miracle whip half mayo)
2 Tbsp. ranch dressing
1/4 cup white vinegar
1/2 cup sugar
2 1/2 Tbsp. mustard
1 1/2 tsp. salt
1/2 tsp. black pepper
handful of chopped green onions
chopped celery (1-2 stalks)
chopped bell pepper (maybe 1/2 of a pepper)
cheese, cubed
ham, cubed  

Boil macaroni and drain, make sure to rinse with cold water, and place in large salad bowl. Add green onions, celery, bell pepper, cheese and ham. In a separate bowl, mix dressing ingredients, then mix into the salad. Can double the dressing ingredients if you want a creamier salad.

 

 

Easy Italian Pasta Salad

1 pkg spiral pasta noodles, cooked, drained and rinsed with cold water (can also use spaghetti noodles)
1 small can sliced olives
Chopped cucumber
Chopped pepperoni (I use the small pepperoni sticks and chop them up)
Chopped fresh tomatoes (optional)
Zesty Italian dressing to taste

Toss all ingredients together
