GTU’s Favorite Party Dip

4 oz. cream cheese
2 c. shredded cheddar cheese
1 can refried beans
1 cup salsa
1 cup sour cream
1 tsp. chili powder

Stir all ingredients in a crockpot and cook on low for a few hours.  Serve with tortilla chips.

GOOD THINGS UTAH HAD A CONTEST FOR THE BEST SUPERBOWL DIP, AND THIS ONE WON THE CONTEST SO I HAD TO PRINT IT OUT.  WE LOVE IT!

 

 

Kelli's Stovetop Spinach and Artichoke Dip

2 TBS extra virgin olive oil
1 TBS butter
3 cloves garlic, chopped
½ onion, chopped
2 TBS chopped fresh thyme leaves
½ small red bell pepper, seeded and chopped
2 TBS flour
1 ½  cup chicken/ vegetable stock
½ cup half and half or heavy cream
1 can (15 oz.) artichoke hearts in water, drained and coarsely chopped
2 boxes, 10 oz. each, chopped spinach, defrosted and squeezed dry
1 ½  cups shredded Italian 4 cheese blend
salt and pepper

To a medium saucepan preheated over medium heat, add oil and butter. When butter is melted, add garlic and onions. Sprinkle in thyme leaves. Sauté 2 minutes, add red pepper. Sauté mixture a minute more. Sprinkle in flour, stir to coat vegetables. Cook flour 1 minute. Whisk in chicken stock and thicken for another minute. Stir in half and half or cream. When sauce returns to a bubble add artichokes, spinach and cheese. Stir until cheese is melted. Season to taste.

 

 

Meat Marinade

1 cup lemon/lime soda
½  c. soy sauce
Few shakes of garlic powder
Couple drops of Tabasco (optional)
2 Tbsp. Oil

Mix and marinade chicken, pork or beef.  Best if you let sit for at a couple hours, but can go up to 24 hours.

 

 

Easy Homemade Granola

1 ½ cups brown sugar
½ cup water
2 Tbsp. maple syrup
1 tsp. salt
4 tsp. vanilla
8 cups oats (I’ve used quick and regular, both work fine)

Stir brown sugar, water, and maple syrup in a microwave-safe bowl and microwave for 3 minutes.  Stir until dissolved.  Add salt and vanilla.  Stir in oats.  Spread on two greased cookie sheets and bake at 275 for about 30 min.  (Will still feel soft when you take it out but it will dry out a little).  Store in air-tight container.
