BREAKFAST

Most of these recipes come from my sis-in-law. Thanks Kelli!!

 

Homemade Pancakes

2 cups flour
1 Tbsp. baking powder
1 Tbsp. sugar
½ tsp. salt
2 cups milk
1 egg
3 Tbsp. oil

 

Homemade Waffles

1 ¾ cups flour
2 tsp. baking powder
½ tsp. salt
1 Tbsp. sugar
3 eggs
7 Tbsp. oil
1 1/3 c. milk

 

Sausage Breakfast Casserole

1 pound ground sausage
3 cups shredded potatoes, drained and pressed
1/4 cup butter, melted
12 ounces Cheddar cheese, shredded
1/2 cup onion, shredded
1 (16 ounce) container small curd cottage cheese
6 jumbo eggs

Preheat oven to 375 degrees F. Lightly grease a 9x13 inch square baking dish.

Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.  In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.

Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

 

Kelli's Breakfast Casserole - (prepare the night before)

12 slices bread
4  cups chopped up ham
½ cups sharp cheddar cheese, grated
2 cups milk
5 eggs
1 t. mustard

Topping:
1 can cream of mushroom soup
1 cups sharp cheddar cheese
1 cup sour cream

Butter 6 slices of bread, place buttered side down in a 9X13 inch baking dish.  Sprinkle ½ of ham and ½ of cheese on top.  Add the other 6 slices of bread buttered side up, finish layering ham and cheese.  Beat eggs, milk and mustard together and then pour over the bread layers.  Let stand overnight in the fridge.

Bake at 325 degrees for at least 1 hour.  For topping, heat soup, sour cream and cheese in a small saucepan until cheese melts.  Spoon on top of individual servings.
